Hash Brown Soyrizo Bake

Grocery shopping at Trader Joes this week and need an idea for a delicious breakfast? Well look no further! I have a five ingredient breakfast for your busy weekend ahead and it’s packed full of protein.

What you’ll need:

  1. One bag of shredded potato hash brown
  2. Soy Chorizo
  3. Mild Cheddar Cheese
  4. 3-5 eggs (depending how many you are feeding)
  5. & fire roasted bell peppers & onions

What to do:

  1. Pre-heat oven to 400
  2. Cook peppers & onions in a cast iron skillet
  3. Cook Soy Chorizo separately in a pan
  4. Add Hash Browns to pepper/onion skillet & cook until hash browns are a light brown
  5. Mix Soy Chorizo with hash browns/peppers; mix for 5 minutes
  6. Create pockets in hash brown mix & make enough pockets for X amount of eggs you’re using
  7. Crack eggs into pockets
  8. Cook Cast Iron in oven until the eggs are clouded & cooked enough to your liking
  9. Remove Cast Iron from oven and let sit for 5 minutes
  10. Serve & add ketchup/hot sauce/sour cream for something extra
  11. && ENJOY!
