Grocery shopping at Trader Joes this week and need an idea for a delicious breakfast? Well look no further! I have a five ingredient breakfast for your busy weekend ahead and it’s packed full of protein.
What you’ll need:
One bag of shredded potato hash brown
Soy Chorizo
Mild Cheddar Cheese
3-5 eggs (depending how many you are feeding)
& fire roasted bell peppers & onions
What to do:
Pre-heat oven to 400
Cook peppers & onions in a cast iron skillet
Cook Soy Chorizo separately in a pan
Add Hash Browns to pepper/onion skillet & cook until hash browns are a light brown
Mix Soy Chorizo with hash browns/peppers; mix for 5 minutes
Create pockets in hash brown mix & make enough pockets for X amount of eggs you’re using
Crack eggs into pockets
Cook Cast Iron in oven until the eggs are clouded & cooked enough to your liking
Remove Cast Iron from oven and let sit for 5 minutes
Serve & add ketchup/hot sauce/sour cream for something extra
